David and I had another one of our favorite meals for dinner tonight -- and although it doesn't look all that appetizing -- it is delicious. You know, don't judge a book by it's cover.

Bourbon Chicken
2 lbs bonless chicken breasts cut into bite size pieces
1 1/2 tablespoons olive oil
2 garlic cloves crushed
1/4 teaspoon ginger
3/4 teaspoon crushed red pepper flakes
1/4 cup apple juice
1/3 cup brown sugar
2 tablespoons ketchup
1 tablespoon cider vinegar
1/2 cup water
1/3 cup soy sauce
Heat oil in large skillet and drop in the chicken pieces. Cook chicken until browned. Add remaining ingredients and mix well. Bring everything to a boil. Let everything sit at a hard rolling boil for a couple minutes to get the sauce sticky and not soupy. Reduce heat and let simmer for a few minutes (~10).
This is best served over basmati rice. Add whatever veggies you like, broccoli or sugar snap peas sound good to me, or even water chestnuts.
